Chicken Salsa Soup

I don't like spicy, but I love this! Make it spicier with a jalapeño or two if you like.

Ingredients

    1 med. green bell pepper

    1 sweet onion

    2 med. tomato

    4 c. chicken broth

    2 clove garlic

    2 tbsp. extra virgin olive oil

    sea salt & black pepper to taste

    1 lbs. chicken breast, skin-on

    1 stlk. celery

Directions

Heat the olive oil in a pot over medium heat. Add garlic, and cook until fragrant. Add the diced chicken, season with salt and pepper, and cook until chicken is done. Add the chopped veggies and let cook for 5 minutes. Add broth and let simmer for about 15 minutes. Season with salt and pepper to taste.

Top with raw cheese, guacamole, or organic sour cream for extra flavor! (Don't forget to add the appropriate fat servings.)
