Makes two wraps – I use the small Ezekiel 4:9 Sprouted Grain Taco Size Tortilla wraps or make the Beyond Diet homemade tortilla wraps!
1/4 c. homemade mayonnaise
1 tbsp. dijon mustard
1/2 tsp. dried tarragon
sea salt & black pepper to taste
1 c. cooked chicken
1/2 shallots
1 stlk. celery
1/3 med. zucchini
1 sml. red bell pepper
2 tbsp. cilantro
2 sprouted whole grain tortilla
1/2 sml. avocado
1 roma tomatoes
1/2 med. carrot
Make the dressing: Mix together mayonnaise, Dijon mustard, tarragon, sea salt, and pepper.
Combine chopped cooked chicken, minced shallot, chopped celery, chopped zucchini, chopped red pepper, and chopped cilantro in a bowl. Pour all but 2 tablespoons of dressing over chicken and veggie mixture; toss to coat. Refrigerate until well chilled.
Assemble wraps: Spread 1 tablespoon of the reserved dressing on each wrap. Layer avocado slices and tomato slices, then ½ of the chicken mixture, and top with shredded carrot. Roll up the wrap, slice in half, and serve.
