A healthy way to enjoy an old standby, this salad is quick and easy to prepare... and it comes loaded with good nutrition and lots of flavor.
2 oz. cooked chicken
8 red grapes
1 c. kale
1/4 c. sweet onion
1/4 c. zucchini
1 garlic
sea salt & black pepper to taste
1 tsp. extra virgin olive oil
1 tsp. coconut oil
2 tbsp. water
Put chicken (diced), grapes (cut into fourths), and olive oil in a medium bowl and stir until mixed. Set aside.
Add coconut oil and onions (chopped) to a skillet, and saute until onions are about halfway done. Add zucchini (diced), garlic (finely chopped), salt, and pepper. Continue to saute until veggies are done. Add water and kale (stems removed and torn into bite size pieces), and stir until kale is completely coated with oil and lightly wilted. Let cool slightly and then add to chicken mixture. Stir until all ingredients are well blended. Adjust seasonings as needed.
You can serve this as is or it's also great on top of sprouted grain toast or with an apple as a side. (If serving on toast or with an apple, add another carb serving). Enjoy!
