This is a tasty dish which is great for a snack, lunch, or a light dinner (especially during the summer when heavy meals aren't really appealing at times). I made this in the food processor, but if you prefer chunky chicken salad, you can hand cut all of the ingredients.
4 oz. cooked chicken
1/4 c. red onion
1/2 c. celery
1/4 c. Granny Smith apple
1/2 tsp. fresh ginger
1 tbsp. Greek yogurt
1 oz. almonds
34 red grapes
Place the following in the food processor: chicken cut in chunks, onion, celery, apple, ginger, and Greek yogurt. Process to desired consistency.
Fold in grape halves.
Transfer to serving dish and top with almonds. Serve as is or on a bed of lettuce, spinach, or other greens.
