Healthy version of a classic! It is so easy to transform this typically unhealthy meal into a mouth-watering, waist-friendly one.
1 lbs. cooked chicken
1 med. green bell pepper
1 med. red bell pepper
1 sml. onion
1 tbsp. coconut oil
1 tbsp. taco seasoning
4 sprouted whole grain tortilla
4 tbsp. fresh made salsa
4 oz. mild cheddar cheese
Heat coconut oil in a skillet over medium-high heat. Add diced peppers and onions; cook for 8 minutes, stirring frequently, until browned and tender. Add diced cooked chicken and taco seasoning; stir well. Remove skillet from heat and move chicken mixture to a large bowl.
Wipe the skillet clean, then grease with a little coconut oil. Place one tortilla in the pan and layer 1/4 of the chicken mixture on one half, followed by 1 tablespoon of salsa and 1 ounce of shredded cheese. Fold the tortilla in half (like an omelet) and let cook for approximately 5 minutes, flip, and cook for another 5 minutes. Both sides should be golden brown and crispy. Slice into 2, 3, or 4 pieces.
Repeat with remaining tortillas, chicken mixture, salsa, and cheese.
