Chicken Parmesan Zucchini Boats

Classic chicken parmesan taste, served inside tender zucchini!


    1/2 lbs. ground chicken

    sea salt & black pepper to taste

    1 clove garlic

    1/2 c. tomato sauce

    2 med. zucchini

    2 tbsp. parmesan cheese

    1/4 c. mozzarella cheese


Preheat oven to 400°F.

Brown ground chicken in a skillet over medium-high heat, breaking it up as it cooks. Season with salt and pepper. Reduce heat to low. Add minced garlic to the skillet, stir to distribute, and cook for 1 minute. Add tomato sauce, and cook for an additional 3-4 minutes, stirring occasionally.

While the chicken is cooking, cut the zucchini in half lengthwise. Scoop out the seeds and some of the flesh, leaving about ¼-inch of flesh to create the “boat.” Arrange the 4 zucchini boats in a baking dish.

When the chicken mixture is done, spoon it into the zucchini boats. Sprinkle the Parmesan cheese over each of the boats, and top each with mozzarella cheese. Cover the baking dish with foil, and bake for 30-35 minutes.
