Chicken Nuggets

Chicken nuggets the whole family will love!


    1 lbs. chicken breast

    3 egg

    6 slc. sprouted whole grain bread

    seasoning or spices of your liking to taste

    sea salt & black pepper to taste

    1 tbsp. coconut oil


Prepare all 6 slices of Ezekiel bread and place in the oven at 350°F and let it dry up for about 10-15 minutes. Once bread is crusty, let cool off. Then place cooled off bread pieces in food processor and make bread crumbs with it.

Cut up chicken breasts into small cubes and place in food processor with spices, add green onions and salt and pepper. Mix well together.

Prepare 2 deep bowls: Lightly beat eggs in one, and place bread crumbs in the other.

Make small 2-inch balls (or larger patties if making chicken burgers) with chicken mixture and flatten with a fork. Place all chicken nuggets into the egg bowl and then once covered with eggs, move nuggets from eggs into bread crumbs bowl.

Heat coconut oil in a frying pan. Add nuggets to the pan and cook for about 10-15 minutes (depending on the size of the nuggets), making sure the juice is running clear. Bring to a golden color.

Make extra and freeze for those days you are in a rush.

Serve with sweet potatoes medallions and green salad.
