A colorful and flavorful chicken dish!
1 tsp. chili powder
1/2 tsp. ground cumin
1/2 tsp. dried oregano
1/2 tsp. sea salt
1 med. bell pepper, any color
1/2 lbs. chicken cutlets
2 tbsp. extra virgin olive oil
1 tbsp. lime juice
1 clove garlic
Place chicken cutlets in a large Ziploc bag. Whisk together olive oil, lime juice, minced garlic, and spices in a small bowl. Pour mixture over chicken in the bag. Let marinate in the refrigerator for at least 1 hour (the longer it marinates, the more flavorful it will be).
When it’s time to prepare the meal, preheat the oven to 375°F. Slice the bell pepper. Place 5-6 bell pepper slices in the middle of each chicken cutlet. Roll the ends up and secure with a toothpick. Place the roll-ups seam side down in a glass baking dish. Brush the tops of each roll-up with the leftover marinade. Bake for 25-30 minutes, until chicken is cooked through.
