Delicious and simple Mexican dish with a kick!
1 lbs. chicken breast
1/2 tbsp. ground cumin
3/4 tbsp. chili powder
1 tsp. dried oregano
2 tbsp. coconut oil
1 c. tomato sauce
sea salt & black pepper to taste
1 sml. onion
1 med. green bell pepper
2 jalapeno pepper
2 med. tomato
3 clove garlic
Chop onion, bell pepper, and jalapeno peppers. Dice tomatoes and mince garlic. Place chicken in crockpot. Season with cumin, chili powder, and oregano. Add veggies, garlic, all other ingredients to the crockpot. Cook on low for 6-8 hours.
Remove chicken from crockpot, and use two forks to lightly shred it. Put chicken back in the crockpot, stir it all up, and let cook for another 30 minutes.
Optional: serve over ½ cup of rice or quinoa, on top of a bed of lettuce, or in a bowl topped with avocado.
