Chicken Curry Salad

My favorite way to turn leftover baked chicken into a fabulous Mediterranean delight! Perfect served for lunch over a bed of greens or as a snack with sliced apple!


    4 oz. cooked chicken

    2 celery stalk, fresh, organic

    2 green onion

    1/2 c. cilantro

    1/2 c. homemade mayonnaise

    1 tbsp. curry powder


Start by cutting baked chicken (skin removed) into small 1" cubes. I use Isabel's Baked Chicken or baked boneless breasts. Place chicken in large mixing bowl with celery (finely diced), scallions (finely diced), and cilantro (chopped).

In a separate small bowl combine mayonnaise and curry powder. Once you have the desired flavor, blend the mixture into the chicken. That's it!

Once blended this salad can be served right away or chilled in the fridge for later. Serve over mixed greens, on toast points, or with sliced apple. Enjoy!
