Chicken Cranberry-Almond Salad

This salad is a smaller sized copycat of a certain restaurant salad, using organic ingredients. For a 2 carb salad, just double the veggies.


    1 oz. mixed greens

    1 oz. cucumber

    1 oz. tomato

    1/4 oz. gorgonzola cheese

    4 oz. chicken breast, skin-on

    1/4 oz. dried cranberries

    1 tbsp. extra virgin olive oil

    1/4 tbsp. apple cider vinegar

    1/4 oz. sliced almonds


Put lettuce on plate or in salad bowl. Sprinkle with cucumber, tomato, almonds, cranberries, and Gorgonzola. Top with chopped chicken breast. Pour dressing over salad. Enjoy!
