Chicken Broccoli Casserole

Chicken, broccoli, and mushrooms combine to make a delicious casserole.


    2 tbsp. coconut oil

    4 c. broccoli

    1/2 white onion

    sea salt & black pepper to taste

    8 oz. white mushrooms

    3 c. cooked chicken

    1 c. chicken broth

    1 c. canned coconut milk

    3 egg


Preheat oven to 375ºF. Grease a 9x9 casserole dish with 1 tablespoon of coconut oil.

Steam the broccoli florets until just cooked; set aside.

Heat the remaining tablespoon of coconut oil in a skillet over medium heat. Add diced onions, and sauté until browned. Add sliced mushrooms and sauté until cooked.

Combine broccoli, onions, mushrooms, and shredded chicken in the greased casserole dish.

In a separate bowl, combine chicken broth, coconut milk, eggs, sea salt, and pepper; whisk until fully combined. Pour the mixture over everything in the casserole dish, making sure everything is evenly covered.

Bake for 35-40 minutes, until cooked through (especially in the middle). Let cool 5-10 minutes before cutting into the casserole and serving.
