Chicken, Bacon, Spinach Quinoa

Chicken + bacon + spinach + quinoa. YUM.

Ingredients

    1/2 lbs. chicken breast

    2 tsp. coconut oil

    1 clove garlic

    2 pce. uncured bacon

    1/3 c. white quinoa

    1/4 tsp. dried thyme

    1 1/2 c. chicken broth

    1 tsp. coconut oil

    2 c. spinach

Directions

Preheat oven to 375ºF. Arrange chicken breast on a baking sheet, and bake for 30 minutes. Remove from oven, and set aside to cool. Cut chicken into bite-sized pieces. (Have some leftover chopped or shredded chicken? You can skip this step!)

Heat coconut oil in a skillet over medium-high heat. Add minced garlic, chopped bacon, and quinoa. Cook, stirring as needed, until the bacon is crispy and quinoa is toasted. Add dried thyme, and stir. Add chicken broth to the skillet, reduce heat to medium-low, and cover. Let simmer for 10 minutes.

While skillet is simmering, heat remaining coconut oil in a small skillet. Add chopped spinach, and sauté until spinach is dark green and wilted.

Add cooked spinach and chopped or shredded chicken to the skillet. Cover, and let simmer for an additional 5-10 minutes, until all liquid is absorbed.
