This pasta bake is delicious!
1 c. mozzarella cheese
1/2 c. parmesan cheese
8 oz. quinoa pasta
2 tbsp. avocado oil
2 clove garlic
4 c. kale
1 lbs. cooked chicken
2 c. Greek yogurt
Preheat oven to 350ºF.
Cook pasta according to package directions. Drain; move cooked pasta to a large bowl.
While the pasta is cooking, heat avocado oil in a skillet over medium heat. Add minced garlic and cook until fragrant. Add kale (torn into bite-sized pieces) and cook, stirring occasionally, for about 5 minutes, until kale is tender. Add cooked kale to bowl with pasta.
Add chopped or shredded chicken, Greek yogurt, shredded mozzarella cheese, and grated parmesan cheese to the bowl; stir to mix well.
Move mixture to a 9x13-inch baking dish. Bake for 30 minutes.
