Delicious and light chicken and broccoli stir fry that wakes up your taste buds and fills your tummy!
10 oz. chicken breast
2 c. broccoli
1 tsp. extra virgin olive oil
1 tsp. butter
1 tsp. lemon juice
1 tbsp. garlic
1 med. onion
1 orange bell pepper
2 tbsp. seasoning or spices of your liking
Put olive oil, butter, minced garlic, and lemon juice in skillet and heat to medium. Cut chicken into 1/2-inch pieces, add to the skillet, and saute for 5 minutes (turn pieces a couple of times for even cooking). Stir in onion (cut into long slivers), bell pepper (cut into long slivers), and broccoli florets. Sprinkle whole mixture with the seasonings (I use sea salt, pepper, basil, thyme, oregano). Make sure to toss all ingredients well to get them coated with the liquids and seasonings. Continue to cook on medium heat and stir occasionally for 10 minutes or until veggies are tender.
