A delicious, healthy and unique take on pudding. An amazing filling meal that's perfect for helping to lose weight because you'll keep hunger at bay after eating it!
2 tbsp. chia seeds
1/2 c. almond milk
1/2 c. strawberries
1/2 med. banana
stevia to taste
1 tsp. vanilla extract
1 tbsp. shredded coconut
1/2 c. blueberries
Combine chia seeds and almond milk (or coconut milk) in a parfait cup, small bowl, mason jar, or other container. Stir well.
Add a pinch of stevia (optional) and vanilla extract; stir to mix well. Move container to refrigerator and let sit overnight.
In the morning, take the container out, and stir everything up. The mixture should have a pudding-like consistency.
Add sliced bananas and strawberries, blueberries, and a little shredded coconut to make it look fancier.
