No-cook jam will keep in fridge for 2 to 3 weeks


    4 c. fruit, your favorite, fresh, organic

    4 tbsp. honey, raw

    1 tsp. vanilla extract

    4 tbsp. chia seeds


Crush the fruit (any fruit you want!), stir in honey (or maple syrup), vanilla, and chia seeds; refrigerate.

Notes: Feel free to use more or less of the sweetener - depends on the fruit you use and your desired taste. The chia seeds will thicken the fruit. Peaches done like this looked awful but tasted great. Berries work great, and 3 cups of strawberries with one banana works well too. This jam is great on toast or crackers, or stirred into yogurt or hot oatmeal.
