Chia Chili Hot Tomato

This is a powerful metabolism boosting dish that I put together for all the health benefits each & every ingred. provides! Chia seeds supply omega-3's! Only 1 carb count for the tomato!

Ingredients

    1/4 tsp. turmeric

    1 lrg. tomato

    1 tbsp. coconut oil

    2 tbsp. chia seeds

    1/2 tsp. black pepper

    1/2 tsp. ground cumin

Directions

In a small frying pan or pot, add all ingredients. Stir together & simmer for about 10 min. The tomato gets juicy & chia seeds absorb the liquid, soften up & thicken tomato. If using cherry tomatoes heat for a min. then gently press down with the back of a spoon or spatula to burst & expose juice. NOTE: you can adjust spices & coconut oil up or down according to personal taste.
