Chewy Honey Cinnamon Oatmeal Cookies

This is another one of my "throw everything together and cross my fingers" recipes. But seriously, they turned out divine. The best part is they contain no sugar or wheat flour! I KNOW it's a ton of ingredients, but it's worth it, trust me! My batch made exactly 20 cookies. A must try! Enjoy!

Ingredients

    stevia to taste

    1/4 c. almond flour

    1/4 tsp. baking powder

    1/4 tsp. baking soda

    1 c. old-fashioned oats

    3 tbsp. coconut flakes

    1/2 oz. walnuts

    2 tbsp. Spring of Life Plant-Based Protein Powder, chocolate

    1/4 c. sprouted whole grain cereal

    1/4 c. honey, raw

    2 egg white

    1/2 c. applesauce

    1 tsp. apple cider vinegar

    1 tbsp. almond butter

    1 tsp. cinnamon

Directions

Preheat oven to 300ºF. Line a baking sheet with parchment paper.

Combine almond flour, baking powder, baking soda, oats, coconut flakes, walnuts, Ezekiel cereal, protein powder, and cinnamon in a bowl and mix until combined. In a separate bowl, combine honey, egg whites, applesauce, apple cider vinegar, and almond butter. Whisk mixture until well incorporated. Add the wet ingredients to the dry ingredients in 3 batches and mix well after each addition. (Taste and add stevia at this point if desired.) The batter will be wet! If it is too wet, add more oats or almond meal, but these ratios made the perfect consistency for my batch. Now, spoon tablespoons of batter onto prepared baking sheet, slightly pressing the cookies flat. Bake for 10-15 minutes. Place on a cooling rack when done. Happy cooking, and ENJOY!
