Chewy Ginger Chip Cookies

If you like ginger, these are a yummy treat! I got a bakers dozen (13) out of my batch and my husband and son really liked them, they were all gone very quickly.

Ingredients

    1/2 c. brown rice flour

    1/2 c. spelt flour

    1/2 tsp. baking powder

    1 tbsp. ground ginger

    1 pinch sea salt

    1/3 c. coconut sugar

    2 tbsp. honey, raw

    1 tbsp. fresh ginger

    1 egg

    1/4 c. coconut oil

    1/4 c. chocolate chips

Directions

Preheat oven to 350ºF. Line a baking sheet with parchment paper. Combine flours, baking powder, ground ginger, and sea salt in a bowl. In a separate bowl, combine coconut sugar, honey, grated fresh ginger, egg, and melted coconut oil. Add dry ingredients to wet ingredients, and mix well to combine. Stir in chocolate chips. Scoop out rounded teaspoonfuls and roll into balls. Place on baking sheet about 1 1/2 inches apart. Bake for 12-15 minutes, until golden. Makes 12-14 cookies.
