Delicious treat for a hot day!
2 c. cherries, fresh, organic
1 tbsp. honey, raw
1 tsp. lemon juice
3/4 c. Greek yogurt
1/8 c. milk, raw or organic
1 tbsp. honey, raw
1 tsp. lemon juice
Remove pits and cut cherries into pieces. Place cherries in a blender and puree. Pass through a fine sieve into a measuring cup. (You should have 3/4 cup puree.) Stir in 1 tablespoon of honey and 1 teaspoon of lemon juice. Set aside.
In a small bowl, combine the yogurt and the milk (it's best to stir the milk in a little a time, until the yogurt is thinned enough to be poured). Stir in 1 tablespoon of honey and 1 teaspoon of lemon juice. Set aside.
Make the popsicles: Pour a little of the yogurt mixture into the mold, followed by a little of the cherry mixture. Repeat until mold is filled. Freeze at least 8 hours or overnight, until the popsicles solidify. If your molds don't come with their own sticks, insert wooden popsicle sticks after 1 hour of freezing.
Run the molds under room temperature or warm water and gently wiggle the sticks to free the popsicles from the molds.
