Cherry Tomato Omelet

Simple omelet, perfect for busy mornings!


    1 tsp. avocado oil

    10 cherry tomatoes

    sea salt & black pepper to taste

    2 egg

    Italian seasoning to taste


Heat avocado oil in a small pan over medium heat.

Cut cherry tomatoes in half, and add to the pan. Season with sea salt and pepper and cook for 1-2 minutes, until tomatoes have softened a bit.

Use a fork to lightly beat the eggs in a small bowl. Season with Italian herbs. Pour egg mixture into pan. Cook for 2-3 minutes. When the eggs have set enough to flip, use a spatula to fold in half. Let cook for another 2 minutes, until eggs are fully cooked.
