I made this last night for dinner and it was a big hit! Cheesy and creamy good. Hubby & Kid tested! :)
1 c. carrot
1/2 c. celery
1/2 c. onion
2 c. milk, raw or organic
3 tbsp. spelt flour
4 oz. mild cheddar cheese
1 tsp. dried parsley
1/8 tsp. black pepper
sea salt to taste
2 c. chicken broth
In a medium sized saucepan, combine chicken broth, carrots, celery, and onion. Bring mixture to a boil. Reduce heat and simmer until the veggies are tender.
In a covered jar, combine milk and flour. Shake really well to blend and make sure the flour lumps are dissolved. Pour this into the broth/veggie mixture. Add cheddar cheese, parsley flakes, and black pepper and salt. Continue cooking until thick and bubbly, stirring Often.
This makes 4 servings of 1 1/2 cups each
You could change the veggies if you wish and even add some already cooked meat to add protein. Also you could spice it up differently.
