We had this with grilled chicken tonight. It was creamy, cheesy, and spicy GOOD! Hubby & Kid tested. :-)
1/2 c. fresh made salsa
3/4 c. mild cheddar cheese
1/8 tsp. black pepper
1 tsp. dried parsley
2 c. brown rice pasta
sea salt to taste
1/2 c. Greek yogurt
Cook your pasta. Don't over cook or it will become mushy.
In a large skillet with a bit of olive oil or coconut oil, combine salsa, cheddar cheese, black pepper and parsley flakes (and sea salt if desired). Cook over medium low heat until cheese melts, stirring often. Add cooked noodles and Greek yogurt. Mix gently to combine. Lower heat and simmer for 5 minutes, or until mixture is heated through, stirring so nothing sticks. Serve while nice and hot.
Serves 4 (about 3/4 cup each)
You could add some meat to this if you wanted protein. Or more cheese if this isn't cheesy enough for you. I used medium hot salsa. My family really liked it as it was a bit different than just regular mac and cheese. :)
