Classic comfort food with a pumpkin twist!
8 oz. brown rice penne pasta
15 oz. pumpkin puree, canned
1 c. chicken broth
3 tbsp. parmesan cheese
sea salt & black pepper to taste
3/4 c. mozzarella cheese
Preheat oven to 375°F.
Cook pasta according to package instructions for al dente pasta.
Meanwhile, combine pumpkin, chicken broth, and grated Parmesan cheese in a medium saucepan. Season with sea salt and pepper, to taste. Stir it all up. Simmer over low heat for 8-10 minutes, stirring occasionally.
Pour sauce over cooked pasta and mix well. Pour mixture into a 9x13-inch baking dish. Top with shredded mozzarella cheese. Bake for 25-30 minutes, until cheese is melted and edges are starting to brown.
