I use these as snacks sometimes or with a meal and this is a side. Husband and Kids love these and I've often made different variations for company, too. Really fast and easy! Add a bit of protein to it if you'd like!
1 c. onion
4 sprouted whole grain tortilla
1 c. mild cheddar cheese
1/2 tsp. ground cumin
1/2 c. fresh made salsa
1/2 c. Greek yogurt
3 olives
Melt a bit of coconut oil in a large skillet over medium high heat. Add onion and saute for about 5 minutes or until tender. Remove onions from pan and set aside. Wipe pan out carefully with a paper towel.
Melt a bit more coconut oil in your pan over medium heat. Or you could spray the pan with olive oil. Place one tortilla in the pan. Cook for 'about' 1 minute or until the bottom of the tortilla is golden. (Do not turn over). Sprinkle 1/4 of the onion, cheese and cumin over one side of the tortilla. You're going to be folding this tortilla in half like an omelet so only put the filling on one side. Fold the tortilla in half. Now cook the folded tortilla 1 minute on each side or until golden and the cheese melts. Watch carefully so they don't get too brown or burn! Repeat procedure with the remaining three tortillas, onion, cheese and cumin.
To serve, top each quesadillas with 2 Tablespoons salsa and 2 Tablespoons plain yogurt. Optional of course. Then I always take a couple of green or black olives (green olives are my favorite) and slice them up and put a few on each quesadillas.

I've often added thinly sliced chicken or lean beef to these. That's really good too! Then you just add the Protein to your daily meal total. Plus, spice it up however much you'd like!
