Cheesy deliciousness... made in the crockpot!
1/2 c. mild cheddar cheese
1/2 lbs. chicken breast
sea salt & black pepper to taste
1 clove garlic
1/4 c. white quinoa
1 c. chicken broth
1 c. broccoli
Cut the chicken into large chunks and place in the bottom of a crockpot. Season with minced garlic, sea salt, and pepper. Add quinoa to the crockpot. Pour 3/4 cup of chicken broth on top. Stir it all up. Cover and cook on high for 4 hours. Keep an eye on the crockpot and add more chicken broth if needed.
Add broccoli florets to the crockpot, stir it all up, and add more chicken broth if needed. Cover and let cook for an additional 30 minutes, until broccoli is tender and bright green.
Add shredded cheddar cheese, and stir until the cheese is melted.
*This is a GREAT recipe to double or even triple to ensure there are leftovers for multiple meals.
