A guilt free cheese sauce
1/2 c. almond milk
1/2 c. canned coconut milk
2 tbsp. coconut oil
2 tbsp. brown rice flour
1 mild cheddar cheese
Melt coconut oil in a pot on low heat. When melted add rice flour to make a paste. Slowly add combined milk while stirring. Stir constantly under low heat till mixture thickens. When it has thickened enough to not be runny. Remove from heat. Slowly add 6 oz of grated cheddar cheese while stirring.
I normally boil a whole cauliflower head, mash it up, put it in a 8 by 8 baking pan and poor cheese sauce over top. Its kinda like a mac and cheese.
