Got this recipe from my BD buddy Celena. It's awesome if you need a topping but don't want the guilt. Tastes like vanilla marshmallows.
3 egg white
2/3 c. honey, raw
1 tsp. vanilla extract
1 pinch sea salt
Put the unbeaten egg whites, honey and salt in double boiler. While water is heating, beat mixture with electric beater on medium to high speed until mixture forms soft peaks. Remove from heat, add vanilla and continue beating until stiff enough to hold shape. Frost and enjoy.
This is easily enough to frost 4 dozen cupcakes.
