Cauliflower Mac 'n' Cheese

Delicious gluten-free mac 'n' cheese!


    1 med. cauliflower

    1 tbsp. butter

    1/2 c. almond milk

    1/2 c. chicken broth

    2 tbsp. almond flour

    2 c. mild cheddar cheese


Preheat oven to 375º F. Grease a baking dish.

Boil a pot of water. Chop cauliflower into small florets. Add florets to pot and let cook for about 3 minutes. Drain, season with a little salt and pepper, and set aside.

Melt butter in a sauce pan over medium heat. Add flour and stir with a whisk until the mixture has become paste-like. Add milk and chicken broth and stir, making sure there are a few lumps as possible. Keep whisking for 3-4 minutes. Add 1 cup of cheese to the pan, ½ cup at a time, continuing to whisk the whole time. (You may need to turn the heat down.) When the sauce starts to really stick to the whisk, you’re done!

Place cauliflower into the baking dish and pour the cheese sauce over it. Mix it all up well, and sprinkle the remaining cup of cheese on top. Bake for 35-40 minutes.
