Cauliflower Flat Bread with Eggs and Avocado

Cauliflower flat bread with mashed avocado and served with hard-boiled eggs.

Ingredients

    1 tsp. extra virgin olive oil

    1 egg

    1/2 c. mozzarella cheese

    1/2 tsp. dried oregano

    sea salt to taste

    black pepper to taste

    1 sml. avocado

    4 egg

    2 c. cauliflower

Directions

Preheat oven to 350°F. Place a piece of parchment paper on a baking sheet. Grease parchment paper with olive oil. Rice the cauliflower by putting into food processor and pulsing until the cauliflower resembles rice. Add 1 egg, shredded cheese, oregano, sea salt, and black pepper to the food processor. Process until mixed well. Spoon mixture onto the greased parchment paper. Divide into 4 round cakes and flatten to about 1/2-inch thick. Bake for 40 minutes. Turn flat bread over and bake for 10 more minutes. While flat bread is baking, mash the avocado and boil the 4 eggs. When flat bread is done, place 2 on each plate and divide the avocado evenly and spread on each flat bread. Cut the boiled eggs in half and divide equally onto the two plates with the flat bread. I eat this for my breakfast. Enjoy!
