Cauliflower Crackers

Gluten-free crackers made with cauliflower.


    1 tsp. Italian seasoning

    1 egg

    1 c. blanched almonds

    2 oz. parmesan cheese

    2 c. cauliflower


Cut cauliflower into florets and place in food processor. Process until cauliflower has become cauliflower rice.

Cook cauliflower rice in a pot or pan for 3 minutes. Remove from heat, and drain the water as much as you can by twisting it in a towel until all the water is out.

Place almonds in food processor. Process until they have become a flour-like consistency.

Combine cauliflower, almonds, parmesan cheese, Italian seasoning, and lightly whisked egg in a bowl. Mix everything together with hands until it becomes a dough.

Line two baking sheets with parchment paper and grease with a little olive oil. Divide the dough between the baking sheets and spread it out so it's very thin.

Bake at 200ºF for 20-30 minutes depending on how crusty/dark you want it.
