This granola recipe can be easily tweaked to your individual taste by adding or omitting ingredients...MAKE IT YOUR OWN and enjoy :)
3 c. old-fashioned oats
1 c. slivered almonds
1 c. walnuts
3/4 c. coconut flakes
2 tsp. cinnamon
1/3 c. honey, raw
2 tbsp. coconut oil
1/4 c. raisins
Preheat oven to 300ºF. Line a rimmed baking sheet with parchment paper.
Combine honey and coconut oil in a saucepan. Heat on medium until smooth and clear.
Combine dry ingredients, saving the raisins to be added when it comes out of the oven. Pour warm honey and coconut oil over the dry mixture and mix thoroughly. Spoon onto prepared baking sheet and place in oven for 40 minutes, stirring/mixing every 10 minutes. Place sheet on wire rack to cool.
Be sure granola is completely cooled before stirring in raisins and moving to an airtight container for storage.
Makes a generous 6 cups. Each serving is about 1/2 cup.
