Cashew-Oat Waffles

Light, healthy waffles!


    2 1/4 c. water

    1 1/2 c. old-fashioned oats

    1/2 c. cashews

    1 tbsp. coconut oil

    1/4 tsp. sea salt

    1/4 tsp. vanilla extract

    1/2 tsp. stevia


Combine all ingredients in a blender or food processor. Blend until light and foamy. Let stand while waffle iron is heating. The batter thickens on standing. Blend briefly. Grease iron for first waffle. Pour 2/3 cup of batter into hot waffle iron. Bake 8-10 minutes. Watch clock carefully. Do not open before time is up. If waffle iron is hard to open, leave a few seconds longer. Top with nut butter and fruit.

Makes 4 waffles.
