This vegetarian "meatloaf" has a very mild taste, but you can easily add more seasonings to make it a bit spicier.
2 tsp. coconut oil
1 c. onion
1 c. celery
3/4 c. cashews
1/2 c. old-fashioned oats
2 tsp. sea salt
1/2 c. Greek yogurt
3 egg
Preheat oven to 350ºF. Grease a loaf with coconut oil.
Saute chopped onions and chopped celery in coconut oil for about 5 minutes on medium heat.
Combine sauteed onions and celery, cashews, oats, sea salt, Greek yogurt, and eggs in a blender or food processor. Process lightly to blend. Move mixture to greased loaf pan. Bake for 35-40 minutes.
