Cashew Encrusted Pork Chops

I wanted something a little different. These were tasty! # of servings depends on your requirements, size of pork chops etc. I eat for 4 proteins at dinner which was almost one chop. Of course all ingredients were chosen the BD way. I hope you like my recipe!


    3 pork chop

    1/4 c. coconut flour

    1/4 c. oat flour

    1 tsp. paprika

    1/2 tsp. sea salt & black pepper

    1/4 tsp. garlic powder

    1 egg

    1 tbsp. extra virgin olive oil

    1/2 c. cashews


Mix flours and seasonings in a shallow bowl. Mix egg and oil in another shallow bowl. Place chopped cashews in yet another shallow bowl. Coat pork chops with flour mixture then dip in egg mixture. Dip in nuts. You may need to chop a few more nuts, I didn't want to waste them so I started on the side of too little and added more to finish.

Place on a baking pan, I used a stoneware cookie sheet and no pre-greasing. Your pan may need cooking spray or a wipe of olive oil or coconut oil.

Bake at 400 degrees for about 40 minutes, turning once 1/2 way through.

Sorry, I didn't take a photo because I didn't know how good these would be and that I would submit the recipe. I'll try to do better next time!
