I have made many wheat-free waffles and pancakes for my family. They always say "that was okay" but don't want them again. With this recipe, they said "make them again!" I like these waffles because they are sweet enough to eat without any syrup.
1/2 c. almond milk
3 tbsp. honey, raw
1/4 tsp. sea salt
3 tbsp. coconut oil
3/4 tsp. baking soda
3 tbsp. coconut flour
3 egg
1 c. cashews
Heat waffle iron. Use a blender on high speed to process eggs, cashews, almond milk, honey, and coconut oil. Process for about 2 minutes or until smooth. Add baking soda, coconut flour, and salt. Blend 1 minute or until combined. Grease waffle iron with coconut oil. Cook waffles in batches for about 1 minute or until done.
