Cashew Coconut Shrimp

Fast and kids like it and it is just soo good.

Ingredients

  • 1 tsp. coconut oil
  • 1 lbs. shrimp
  • 1 green onion
  • 1 frozen baby peas
  • 1 c. white mushrooms
  • 1 c. canned coconut milk
  • 1 kg noodles, rice, stick or vermicelli, organic
  • 1/4 c. coconut flakes
  • sea salt & black pepper to taste
  • 1 c. sour cream, organic
  • 1/2 c. cashews

Directions

In a large skillet wipe it down with some coconut oil and add shrimp and onions, peas and mushrooms cook about 5 minutes add coconut milk sour cream, and moistened rice noodles, stir all together for about 5 min on med heat, add cashews and coconut flakes , cook all together for 5 minuted or so and its ready to serve.
