Cashew Basil Nut Cheese

Good alternative to cheese.


    1 c. cashews

    1/2 tsp. sea salt

    1 fresh basil

    1 sml. garlic

    1 1/2 tbsp. nutritional yeast

    1 tbsp. lemon juice


Place cashews in a bowl of water, cover, and soak overnight in the fridge.

When cashews are ready, drain and place all ingredients (cashews, sea salt, olive oil, basil, garlic, nutritional yeast, and lemon juice) in a food processor. Process until smooth, stopping to scrape sides of processor as necessary. Taste and adjust seasonings if necessary.

Place any leftover cheese in a container in the fridge and enjoy with chopped vegetables, crackers, bread, and chips!
