Healthy fritters, great for breakfast!
black pepper to taste
1 egg
3/4 c. zucchini
1/4 c. carrot
Lightly beat the egg. Mix in zucchini, carrot and cracked pepper. Put in the fry pan (with water or a little bit of oil) for a few mins each side - it should be at least a bit brown!
