I grew up on a recipe just like this. So, this brought back memories for me! I tweaked it BD-style and think it's yummy and a great way to help my kids eat carrots. :) Hubby and kid tested!
3 lrg. carrot
1 c. raisins
1/2 c. walnuts
1/4 celery stalk, fresh, organic
3 tbsp. shredded coconut
1 med. red apple
1 egg
1 tbsp. lemon juice
2 tsp. dijon mustard
sea salt & black pepper to taste
1 c. extra virgin olive oil
2 tbsp. Greek yogurt
1 tbsp. apple cider vinegar
1/2 tsp. honey, raw
1/4 tsp. sea salt
In a medium sized bowl, combine the shredded carrots, raisins, chopped walnuts, chopped celery, coconut, and chopped apple.
In a small bowl, stir together the mayo (recipe below), Greek yogurt, vinegar, honey, and salt. Stir well and then add to the carrot mixture. Mix well, cover and refrigerate a for a few hours before you serve.
Directions for Homemade Mayonnaise: In a blender or food processor, process the egg, lemon juice, mustard, salt and pepper until well combined. While the motor is running, pour the oil in a slow, thin, steady stream and process until the mixture is thick and creamy. *Take your time with this recipe. If you try and rush it, it won’t come out right. **Use only 1/2 cup of mayonnaise in this recipe.
