Caribbean Tilapia with mint mango salsa

This is so yummy! Skillet fry some potatoes with it in acceptable oil for an excellent high protein dinner.


    4 tilapia

    3 spg. fresh mint

    1/2 c. arugula

    2 c. mango

    1 tsp. extra virgin olive oil

    2 tbsp. coconut

    2 tsp. coconut oil

    seasoning, caribbean jerk, organic to taste


Prepare salsa first by chopping the mint and arugula. Cut the mango into bite size chunks or if using frozen chunks thaw those. Mix the mango, mint, arugula, olive oil, and coconut. Make in advance if you like and refrigerate. Sprinkle fish with jerk seasoning or Old Bay if you like a little heat. Pan fry the fish 4 minutes per side in coconut oil until fish flakes. Serve fish with 1/4 cup of salsa on top.
