Caramelized Onion and Sweet Potato Frittata

Whether you eat it for breakfast or dinner (or both), this frittata will not disappoint!


    2 med. sweet potato

    1 tbsp. extra virgin olive oil

    1 med. onion

    2 tbsp. butter

    1 spg. fresh rosemary

    2 tbsp. butter

    12 egg

    1 pinch sea salt

    1 pinch black pepper

    1 oz. mild cheddar cheese


Peel then chop sweet potatoes into half-moons. Evenly coat sweet potatoes with olive oil in a medium bowl then transfer to a parchment paper lined baking sheet. Bake at 400°F for 20-25 minutes.

While sweet potatoes are roasting, chop onion to preference. Heat up a large frying pan and add 2 tablespoons butter. Add chopped onion and whole rosemary sprig to pan and evenly coat in butter. Caramelize onions on medium-low heat for 20-30 minutes or until onions are translucent and browned.

Once sweet potatoes are baked and onions are caramelized, add 2 tablespoons butter to a clean, deep frying pan. Add onion and sweet potatoes to pan and spread evenly along bottom. Whisk eggs in large bowl then pour evenly over onions and sweet potatoes. Add sea salt and black pepper, to taste. Cook for 5 minutes on stovetop, working the edges to allow raw egg to cook along the bottom. Sprinkle with cheese (optional). Transfer deep frying pan to the oven and bake at 400°F for 10-15 minutes. Cool for 10-15 minutes then cut into 8 slices.
