Made my switch from regular cappuccino to this healthier version with no problems, I even prefer it with coconut milk.
4 tbsp. espresso, organic
1 c. canned coconut milk
1 tsp. coconut sugar
1 pinch cinnamon
Prepare espresso as you would normally do, except use a bigger cappuccino cup. Froth the coconut milk, mine froths up quiet nicely. Pour warm frothed coconut milk over espresso. Add a dash of stevia and stir. Finally add a sprinkle of cinnamon and enjoy. I have an espresso machine, but you can make cappuccino with a regular stovetop espresso percolator and a hand held frother. I've made it both ways with success. I would have never thought that the coconut milk would froth up, but surprise, it did - I'm glad I tried it out. I make my own coconut milk from the recipe on this site, which allows me to control the thickness of the milk.
