Amazing Caesar Dressing!!! Makes about 2 - 3 cups
1/2 tsp. black pepper
2 garlic
1/2 tsp. sea salt
1 c. parmesan cheese
1 tbsp. lemon juice
2 oz. anchovies, in organic olive oil
1 tbsp. whole-grain mustard
1 egg
1 c. extra virgin olive oil
1 tsp. fresh oregano
1 tsp. fresh rosemary
Put all ingredients EXCEPT OIL in blender. Slowly start blending and gradually add olive oil until consistency is reached (you may need to use up to 1 1/2 cups of olive oil - it just depends on the consistency you're looking for). This dressing is so yummy. If you are a Xaesar fan it will blow you away!
You also may use a little honey to balance tangyness. Dressing should not separate after initial blending. If it does just zap it in blender before using. Keeps well in fridge for 2-3 months. Count each tablespoon as 2 fat servings.
