Yummy cabbage soup!
6 oz. tomato paste
2 tbsp. fresh parsley
1 lrg. cabbage
3 c. cauliflower rice
2 tbsp. butter
2 tbsp. extra virgin olive oil
1 c. onion
4 clove garlic
1 1/2 lbs. ground beef
1/2 lbs. ground pork
6 c. beef broth
3 tsp. dried oregano
2 tsp. sea salt
2 tsp. smoked paprika
2 tsp. garlic powder
2 tsp. onion powder
1 tsp. black pepper
1/2 tsp. dried thyme
28 oz. diced tomatoes, canned
Heat butter and olive oil in a large pot over medium heat. Add diced onions and minced garlic; cook until garlic is fragrant and onion is translucent.
Add ground beef and ground pork to the pot, and brown, breaking the meat up as it cooks. Add beef broth, oregano, sea salt, paprika, garlic powder, onion powder, pepper, thyme, diced tomatoes (drained), tomato paste, chopped parsley, cabbage (cut in half and sliced), and cauliflower rice. Bring to a boil, reduce heat to low, and simmer for 30-45 minutes.
