Simple butternut squash soup. A mugful is the perfect way to warm up on a cold day.
1 med. butternut squash
2 tbsp. butter
3 c. chicken broth
1 med. onion
sea salt to taste
Saute finely chopped onion in butter until translucent. Add broth and squash (cored and cubed). Simmer until squash is soft, about 20 minutes. Mash up squash with a slotted spoon. If you like chunky soup, stop there. If you like it smoother and creamier, blend the mixture. Add light cream just before serving if you want some dairy added. Add fine chopped red pepper or chives as a garnish.
Serve with salad and toasted sprouted grain bread.
