A tasty replacement for Chips/Fries. Delish straight from the oven and also really nice cold the next meal/day with salad or with a dip. Boyfriend and Jack Russell approved :)
1 butternut squash
1 tbsp. extra virgin olive oil
Cut off the round end of a Butternut Squash and put it aside. Then cut the remainder of the Squash into inch thick discs (leaving the skin on, it gives them more taste) lay the discs flat and cut them into 4-6 strips (depending on the thickness you want them) Spray with an oil of your choice and place them on a roasting tray. Cook for around 40mins at 200 (depending on the thickness they have been cut). I cook mine till the corners start to crisp as they are better slightly crispy. Depending on the size of squash is depending on how may servings you get. You can also use the round end of the squash, scoop the seeds out and cut it into strips giving you curly fries Its also nice with chilli and garlic flakes sprinkled on before cooking.
