A quick one skillet meal with ground buffalo, zucchini, red bell pepper, onion, mushrooms, celery, broccoli, carrots and spinach in a light brown sauce served over rice.
1 lbs. ground buffalo
2 tbsp. extra virgin olive oil
1/2 c. zucchini
1/2 c. green bell pepper
1 med. onion
1/2 c. white mushrooms
1/4 c. celery
1/2 c. broccoli
1/2 c. carrot
1 c. baby spinach
1/4 c. spelt flour
sea salt & black pepper to taste
1 tbsp. Italian seasoning
2 c. brown rice
Heat olive oil in large skillet, add ground buffalo breaking it up into small pieces. Brown thoroughly. Add all vegetables, cook 8 minutes over med-low heat. Add one cup of water and seasonings, bring to boil. Lower heat and simmer for 10 minutes. Mix flour with 1/2 cup water, add to skillet stirring until thickened. Divide into four equal servings. Serve each portion over 1/2 cup brown rice.
