These flaky, delicious crackers are vegan and gluten free.
1 1/2 c. brown rice flour
2/3 c. brown rice
1/4 tsp. sea salt
1/4 c. coconut oil
1 tbsp. ground flax seeds
1/3 c. water
Preheat oven to 375°F. Lightly oil large baking sheet. In bowl or food processor, mix flour, cooked rice, flaxseed, salt, and oil until combined. Add water a little at a time until dough hold together (may require up to 1/2 cup of water). Pour onto floured surface and knead a few times to form a ball. Press or roll dough thin (I did mine at 1/8" but could have gone 1/16" for crunchier crackers) on baking sheet. Score into 1 by 1 squares or 1 1/2" by 1 1/2" squares. Bake 20 - 25 minutes, or until golden brown. Cool before removing from pan.
Can also add salt on top of them before baking as well as sesame seed or butter.
